Ingredients
- 75 gCooked skinless turkey breast — thinly sliced
- 30 gHummus
- 40 gWhole wheat pita — 1 small pita
- 40 gCucumber — thinly sliced
- 40 gTomato — diced
Steps
Prepare the filling
Slice the turkey and cucumber into thin pieces. Dice the tomato and drain away excess juice.
Open the pita
Cut the pita across the middle and gently open each pocket. If it cracks, warm it briefly until flexible, then let it cool.
Fill
Spread hummus inside the pockets. Divide the turkey, cucumber and tomato between the halves, keeping the filling loose enough to bite easily.
For a smaller portion
Eat one pita half first and refrigerate the other. For an open plate, serve the turkey and hummus with a few pita strips instead.
Notes
- Best assembled just before eating. Keep the filling chilled and use cooked turkey within its original 3-day storage window.
- Hummus commonly contains sesame. Check the ingredient list; a sesame-free bean spread is a possible substitute.
